The Danish food sector is losing jobs, and producers face a long-term trend of income problems. Agriculture is challenged with regards to compliance with the EU habitat- and water directives, which indicate the need for differentiating land use in Denmark. There is thus significant economic, societal and environmental potential in agricultural diversification through developing Danish provenance foods. Consultation with municipalities and enterprises, indicate that knowledge gaps about physical, cultural and economic factors above the scale of individual farms are preventing the growth of the Danish provenance food sector.
